User Defined Data Streams are not "hard", they're just rare.
As Doug mentioned, output-only UDDS are actually pretty easy and can be seen in
packages like SEQUEL and probably even DBU. 

Input/Output UDDS requires more codes, not much more complexity than output
UDDS. 
I would consider using a Panel Group or whatever its called nowadays, as you can
generate a script of the display and then call an API to display the panel
group. Input and Output are supported.

DSM is also a good choice, and can be pretty easy to use if you narrow down the
API's. Simply stuff is, well simple with DSM. Its only when you add in all those
Windows and moving windows and moving fields that there's tons of APIs to deal
with. 
Another choice, but it sounds like you're going Green Screen on us, is to use
the browser as your I/O interface. This gives the best flexibility with the
easiest dynamic interface. But again, it isn't a green screen solution.

The two guys that worked heavily on the 5250 data stream are retired and living
in Rochester. They have a few, cool products, such as a PDF Output writer and a
Graphical User Interface for the iSeries. 
You may want to shoot them an email and see if they have any old examples laying
