LANSA's GUI mapper is pretty good. You say you checked them out though.

EDI is supposed to move and flow and upgrade versions, so you need a GUI
mapper. But my experience is that once a document is setup, it's rarely
changed. Customers might add an element or two, but it never moves that
much.
