The thing is, I do this every stinking quarter and have no issue.

Mimix has three phases:
Phase 1: Switch from PROD to PRODBACK.
Phase 2: You're done monkeying around with PROD. Start the resync
process (a simple menu option).
Phase 3: Switch from PRODBACK to PROD.

I do Phase 1 on Friday evening.
I do Phase 2 on Saturday afternoon when my work on PROD is done.
I do Phase 3 on Sunday evening.
The outages are about an hour on Friday evening and an hour on Sunday
evening. You can reduce this time by redefining "outage". Like saying
outage is only the switch time and not the time you take kicking people
off the system, ensuring that all spool files are replicated (like that
spool file that was open for days due to item master maintenance), and
related stuff.
I try to keep the time of doing Phase 1 and phase 3 consistent. Makes
scheduling a truck easier.

I don't know how casino's do this.
