Can these printers fax over VOIP phone lines? I have an 8500 series
printer and it won't fax over my VOIP line.

If this is for home/SOHO usage, I like the HP OfficeJet 8600 family. You
can get them for $120-150 and they do the print/scan (including
OCR)/copy/fax, have good speed, duplex, etc. Connect via USB, Ethernet, or
WiFi.
The 8000 family's advantage over lower end/cheaper units is that they're
more efficient on ink usage. So they're cheaper to operate.

Sounds like a good excuse to go out and buy a decent printer. Heck,
might even get one with a scanner/copier; but, then, I wouldn't have

You might also want to make sure the printer has Win7 drivers before
trying the parallel-USB adapter. Some peripheral manufacturers used
the change in driver models that occurred when Vista came out (further
refined by Win7 &
8) as an opportunity to end support for older models (in an attempt to
spur new sales).
