If we create the console sessions as shared from the HMC itself in the data center then they remain no matter if we lose our connection or not.

What is best practice here?

Unfortunately not applicable for you, but maybe in the future. If you can move to a POWER based HMC (like the 7063-CR1 or CR2), you will have the opportunity to set a BMC IP address. This BMC functionnality allows you to take remote control on the HMC and, for instance, start a shared local 5250 console session, just like if you were physically close to the device.
