As stated previously, I use gmail.

I have almost 100 labels in gmail. Every incoming email (unless it's
something unexpected) gets filtered into one of these labels. And I have
every label set to "show if unread" so the only visible labels are those
where I have email to read.

I think gmail is phenomenal for organizing email.

+1 I do the same thing but with the Notes mail client using my normal
work email address.
