My Mac is completely up-to-date and also runs ACS with no issues.

After the last OS update I did have to go through a process to update the Java. That was discussed here on the list and also the information was on IBM's ACS site I think.

But as others have said, Java is not Javascript so I'm a bit confused by you statements.

Also ACS doesn't run in a browser so nothing done in Safari would affect anything.

If Safari is the issue then load Chrome on the Macs - that's what I use as my primary browser anyway.

I would also look to Lega-Suite support and ask them what the solution is. One thing I can pretty much 100% guarantee is that loading Windows (which means loading Paralllels or something equivalent first) will not be an easy or cheap solution, will boost your maintenance issues and - more importantly - is a complete waste of time and energy as there have to be easy solution - like manually installing the correct Java version!

Frankly I suspect your tech folks don't know much about Macs because this is nonsense.
