fixed and adjusting the font size. I say this because I've had to futz
with the settings on both. And the settings are actually in the same
place for both:

Edit -> Preferences -> Appearance -> Font

As my eyes get older, I find that I much prefer the original client access
behavior, and I couldn't find anything in the documentation that suggests
how I might configure it. Has anybody else noticed this and perhaps
identified a workaround?

You want the "fixed font" option.

Incidentally, neither of the behaviors you describe (fixed window size
with variable font size, or fixed font size with variable window size)
is what I would call "5250-specific". If anything, I associate "5250"
with old dumb terminals. Those had a fixed screen size and a very
narrow font in 132-column mode; so to me, that is the "original"
behavior.
