Is it possible to port 5.3 save files to 6.1, if not I could go the route of

V5R3 savefiles can be read flawlessly on V6R1. No need for any
intermediaries. Be aware that program conversion still occurs, so you
need to make sure your objects can be converted. Run ANZOBJCVN on the
V5R3 machine to make sure of this.

If I do this what would not be able to be converted, if saved IFS, DLO,
*ALLUSR, etc could I build a system this way??

Do you want to change the machine? If possible, upgrade to old one to
V6R1. If that's not possible, read the documentation. Such an upgrade
is possible, but complicated. There are other people on this list who
have more experience with this kind of migration, we usually just
migrate the data, and upgrade our applications in the same process.
With proper documentation, this is pretty easy.
