Also, as you point out POP is just the transport, you could accomplish the same thing on any server and use POP as the transport protocol. However, other than Exchange and Notes (er, Domino?) I'm not aware of any servers that do so. Most POP implementations are simple implementations over either a file system or database hosted mail store without any server-side processing. Also, now that I think about it I don't think you could use either POP or IMAP exclusively in an environment that used server-side processing.
