OK, I have to jump in here.  

What else is running on the NT box besides this app?  IIS for a web
server? Some kind of mail? Oracle? Microsoft SQL Server? File/Print
sharing? 160 Meg doesn't sound like a lot for a server.  It may be
helpful to check the vendor and see if they recommend Sun's JVM over
Microsoft's.  (Both will run on NT, although I am not sure if they will
run at the same time) 

Are you sure Java is what is eating your memory?
