We have had good performance using internal MIO cards from I-O.  The
setup is straightforward, and once setup they function as part of the HP
printer.  Cards are about $500 with a parallel port for PC or LAN
sharing.

Another simple option is a "pigtail" type external adapter from Priam. 
Also about $500 with shareable parallel port pass-through.  If you have
an available MIO slot in the printer, the only advantage of the external
solution is portability, the disadvantage is extra wires to manage.
