Well, if you insist on a Java client, which Java UI do you plan to use? Swing is okay, but not particularly pretty. SWT is much nicer in appearance, although it requires some code on the client machine and thus is a bit harder to work with in an applet. There are also any number of Java frameworks, both commercial and Open Source, available for use. Which one do you choose? I'll be interested to see what your final product looks like.
