I don't have a specific example lying around, but imagemagick is a tool commonly used for such things on Linux and it can be run on IBM i in PASE. Once you have it working, you should be able to just run "magick convert myfile.pdf myfile.jpg" in PASE.
Scott Klement has instructions on his site for installing imagemagick on IBM i, but that is for a very old version. You may need to experiment a little to get a newer version working. There are likely more dependencies than the old version. However, your use case is simple enough that the older version may work well enough to play around with it. I still recommend getting to the current version before going to production though.
