There are ways to received a notification when the email is read (Mail Disposition Notification) but that relies entirely on the client who receives the email. If they have turned that feature off, then there is nothing that can be done. If you want this feature, you need to make sure the mail package you're using supports in an inserts the proper headers. Even if you were to traces the communications to the recipient, it wouldn't be 100%... and if you're using a mail router, it makes it even more difficult.
