Did you stop and restart the SMTP server?

Our parent company has our email setup on Office 365.
Our current SMTP server is over 10 years old and we can’t find a log to
look at.

One easy guess it that it was never coming thru the SMTP server before.
You don't state:

* what sort of destination you are receiving your test email at
(another IBM i?)

* whether you checked the logs of the old SMTP server to see if the
email came thru there.
