For example I need to see if we are, on average, running an 85% load on the 3 cores, or if we are running, on average a 35% load on the three cores, or somewhere in between?

I can't help you with that, but if you use a HMC to manage the machine, it provides tools and diagrams to look at an LPAR, performance-wise.

Maybe this gives additional insight?
