IBM i hosting, and VIOS as well, are only ways to provide IO virtualization. They do not play any role for CPU and memory topics, so the LPAR will run with CPU's server model and this mapping applies: https://www.ibm.com/support/pages/system-ibm-i-mapping

This document does specify specific cases (such as POWER9 and 7.1) but says nothing which could lead to think that IBM i hosting removes the server dependancy.
