Most people would say their writing an "FTP server" or "HTTP server" or INSERT-WHATEVER-NETWORK-PROTOCOL-HERE server... or whatever it happens to be.

What if I don't have a name for the protocol, because it's some SMTP lookalike but for chunks of textual data? ;-) (SCNR)
