After a little deeper digging, I realized the machine that is not responding
correctly has been upgraded to a new version of the software.  The old
version that returns a x'40' instead of the x'41' has the fields defined as
type A.  The machine that returns the x'41' has the fields defined as type
O.

Anybody know how to make ODBC pull the type O fields as if they were type A
fields?

Not sure from your description whether they want the x'40' or the x'41'. 
  But just at a guess, it might be something to do with ccsid 65537
translation, which you can set on one of the ODBC tabs. And/or what the
default ccsid is set to the IBM i.
