For smaller shops, having some alternate (cheaper) means of (shared) storage for the virtual guest disks could make sense.
I don't understand what you try to say with your virtualized virtualization layering. The NFS server is supposed to be real hardware. Otherwise, you'll create an interesting situation when a power outage happens. Recursion: see recursion. :-) And yes, it's possible to shoot yourself in your own foot with recursive storage using Vmware ESXi, as I've seen (and heard the cursing from the customer's server room). :-D
At my employer, I'm running around 150 Linux- and Windows VMs with 8 servers stored on a mirrored NFS server over 10GbE with very decent performance. It's always a question of knowing which knobs to turn. ;-)
