We've used Apache for mission-critical CGI apps & services for years. It's solid and my go-to for new development.
When I hear "Web Application Servers", I think of Java web app servers. I don't consider those interchangeable with Apache. They can work with Apache, but I don't see them as opposing choices (like red wine or white).
