based on the job's entry number. So my efforts to change the user
profile don't work (i.e. job has already ended or has yet to be
submitted). Am I going to have to remove them and then add them back?


You shouldn't need to change the user profile that added the
scheduled entry. But, you can change the user profile under which the
scheduled job will run once the entry is submitted. Using option 2 to
change the entry and press F9 to display all parameters then scroll
forward till you see the user profile to change.
