If I stop sharing root, all of these existing drive mappings will go
away, and the users themselves will have no idea what to do about that.
Will I have to visit every desk in every building to figure out what
subdirectory people are actually using? And then create a new share and
alter the mapping?

Yes you will have to change every desktop which had a share to root.
Keep in mind that the http://myibmi:2001 has ways to see who is using that
share. This is what we used versus visiting every desktop throughout our
international domain. If someone connected later and got an error we
dealt with it.
I argued against a root share from the beginning. Thanks to recent
ransomware attacks my warnings were heeded. Luckily they hadn't hit us,
yet.
