To expand on Pete's point you could do some background PHP scripting with some of your newfound PHP skills.
I bet there's some PHP stuff out there that could help for this.

You have probably already thought as far outside the box as I have but
both node.js and Ruby have PDF merging capabilities (gems and plugins).
The devil would be in the details but with PowerRuby and Node being
available more "natively", they might be options if your target
deployment is to more recent versions of the OS.
