Absolutely we use it :-)
We have several customers who use Windows Services for Unix to store millions of documents on their Windows Server environments, including Vmware servers.
You can also use Linux, NetApp and other NFS variants as well successfully.
You may have had a network performance issue or an underpowered Windows Server perhaps, but it works well.
FYI - I also use Windows Services for Unix to back up VMware ESXi disk images and it works for that too, even though it's not officially supported by VMware.

Question though: Do you actually use the MS Unix extensions or do you use a third party? We tried the MS version a while back at a customer and were terribly unimpressed. It installed THOUSANDS of files and both configuration and performance were terrible. Maybe it's been fixed??
We used some free version and while I don't recall what we used it's still running!
