That allows you to restore an individuals folder if its required as
opposed to restoring all users mail to the last backup point - i.e.
deleting all mail that's not backed up.

That's called a "brick-level" backup. Ask the exchange gurus (I am _NOT_
one, but I know several) and they'll all tell you brick-level backups
are evil. I know one Microsoft MVP whose e-mail tagline is "Protecting
the world from PSTs and Bricked Backups!"

Trying to restore a single mailbox is like taking an iSeries backup and
trying to restore just customer 12's orders from yesterday.
