But what if some of  your customers doesn't use your version of Word?

I must respectfully disagree with this statement.  PDF documents can be
modified with appropriate software.  In addition, these documents take
considerably longer than Word documents to open.
 
A password can be required to modify a Word document to prevent unauthorized
changes.

A Word doc can be modified, so you don't want to send an invoice that can be
modified.
