You need to change both the UTC Offset and the time.

FYI:
EST Eastern Standard Time, is UTC-5:00 hours
EDT Eastern Daylight Saving Time, is UTC-4:00 hours

CST Central Standard Time, is UTC-6:00 hours
CDT Central Daylight Saving Time, is UTC-5:00 hours

MST Mountain Standard Time, is UTC-7:00 hours
MDT Mountain Daylight Saving Time, is UTC-6:00 hours

PST Pacific Standard Time, is UTC-8:00 hours
PDT Pacific Daylight Saving Time, is UTC-7:00 hours

In the fall we switch to Standard Time.
