Courier New 9pt usually seems to work best for including displays in a word document. You won't get underlines, but you can edit them in fairly easily. In order to do a graphic capture, I've usually needed to use a graphic program like paintshop or hijack to do the capture, and then paste into a document. This works pretty well in word, but try to keep the aspect ratio the same as the original screen and as close to 1:1 as possible or the font reproduction will be poor.
