It's the brazenness of the way companies pursue cheap
foreign labor that I find insulting.

I survived several waves of 'downsizing' in the past because I was
junior (cheap), and the ones being let go were senior (expensive).
Labour cost has always been an important driver in a for-profit
organisation. Now the shoe is on the other foot and I am senior
(expensive) and frankly always expected to get the chop because of
that fact alone. It doesn't insult me or surprise me but it does make
me wish there were a way to prove my value to the organisation. If I
could prove that I'm worth more than I'm paid, then perhaps my job
would be safe. The trick is that expenses (payroll) are easy to see,
the return I provide isn't.

One question is there a way to negotiate a contract without being fooled
as to length of the project?

The contract should stipulate the term. If the employer terminates
early, they are in breach of contract.
