It depends on the State where unemployment is filed.  In CA, your unemployment 
is based on the last 12 months (I think) of salary.  Length of employment at 
the job is irrevelant to the amount of money you receive.

If you think the other job offers you better opportunities and will give you 
more job satisifaction, switch jobs.

Quitting a job is risky. If the employer cuts your job, the severance will 
be proportionnal with your length of service. If you start on a new job, the 
length of service will be smaller, hence the severance. This is part of the 
risk. Also, you never really know what the environment of the new position ( 
bosses, internal politics and rules and policies) will really be. You might 
end up in a similar situation.
