In a prior life I used and liked Premenos' AS/400 solution using GEIS as a 
VAN.  The big effort is not in the mapping from/to EDI, but changing your 
in-house software to support your trading partner's wants.  For instance, 
they may want to be able to send you a PO and expect you to provide a bill 
of lading.  If your system doesn't do that now (on paper, at least) then 
you'll have to add that.  Also, each trading partner wants to use THEIR 
part numbers (not yours...)
