Specifically, the HCE keyboard mapping is done through the same key binding Preferences as everything else. (PREFERENCES > GENERAL > KEYS.) There is a Category for Host Connection. (There are also a couple of specific preferences for HCE - left and right CTRL keys.)
Unfortunately, there's not much else you can customise for HCE, e.g. cursor style, colours, etc.
Then there's the iSphere 5250 Emulator plug-in - it has a lot more going for it than HCE. Is this an option for your client?
