A little different because of the 64-bit OS.

The date on the MANIFEST.MF file is 10/29/2010.

I've seen that before, and it leans towards having the wrong version of
the plugin being loaded.
Verify the date on the following file:

C:\Program Files\SoftLanding\RSE
Extensions\eclipse\plugins\com.softlanding.rseextensions_7.5.0.20101028\

Lets try this.
First, make sure you have 'Classic Update' enabled from
Window->Preferences->General->Capabilites

Then, from Help, highlight Software Updates-> and select Manage
Configuration.
Expand the nodes and look for the RSE Extensions.
Is there only one entry?
Does it point to the correct install location?
Is it enabled?

It sounds like it might not have been installed into the 8.0
instance.

Try this:
Right click the icon you use to launch RDP 8.0 and select
properties.
Get the value for "Start In".
Now explore to that locations.
Do you find a folder called 'links', and within it a file called
'com.softlanding.rse.extensions.link'?

if not, create the folder 'links'.
Then, copy the com.softlanding.rse.extensions.link file from the RSE

extensions folder.
(Mine is found in C:\Program Files\SoftLanding\RSE Extensions)

Navigate to: Remote Systems->IBM i You should then see the RSE
Extensions preferernce. Select it.
Now you should see an option to "Add RSE Extensions SubSystems to
existing connections by clicking the button".
Try clicking the Add button to see if it will add the subsystems

your connections.

previous selection, etc. Nothing to make it completely
unusable, just annoying

at times.

That being said, the RSE Extensions work great in 7.5.

If it's not 7.5.0.20101028, then you have an old version and
should download the latest.
