Do you have ANY idea how many times I looked for a right-click/Properties
option to change those values?  And never once did I think to double-click
on the server itself.  Never once.

There are times when I really hate GUIs...

I think that's a deficiency in the create wizard (and it still exists in
ASTK 6.1), but you should be able to change them after they're created:
just double-click on the server, change the "Server name:" field and
then save.
