We have done quite a bit of WebFacing type work on existing apps and went with a default screen resolution of 1024 x 768. We determined that it was just too hard to fit things horizontally as you mentioned. Basically we determined that we wanted zero use of a horizontal scroll bar and as little as possible the vertical.
