Mike, I believe WF uses a master layout page that controls the L&F, that is why you can change the "style" without reconverting your pages. The properties dialogs have a bunch of settings that lets you tweak the various aspects of the layout. If there are specific customizations you want to make, such as hiding certain fields then the way to do that is via the Code Designer. It has some special "web" properties that it stores as comments in your DDS. The generator recognizes these comments and applies them. This is better than tweaking the actual generated JSP since it allows you to regenerate in the future without losing your changes. Have you tried searching the RedBooks?
