When I highlight a variable and right click there is no 'Add to Monitor'
option.  I tried everything I could find (help text and otherwise) to get a
variable to display in the monitor window but nothing worked.

Did you try to highlight a variable, right mouse click, and use 'Add to
Monitor' menu
item? Do you get an error message? Does anything appear in the 'Monitors'
view
in the top-right corner? You might have to bring the 'Monitors' view in
focus.
