I don't want to have to implement ZUGFeRD XML with SQL.
I'm fine with simple XML solutions, but when it comes to complex structures,
all hell breaks loose.

Nah - Ok, the XML... functions are not straight forward, but they are also
not complicated. And the readability it mostly an indentation and commenting
thing:

IMHO - SQL has the advantage, that it will still be readable and usable many
years from now.
