It's been said that "it's better to seek forgiveness than ask permission". I'm not sure how much that you want to test it. You may want to try a little here, and a little there where it's not too invasive. It is possible to learn and try new things without stepping on people's toes. If you want to learn the business you can do it without formally declaring that you want to do it. Just ask some questions here and there, hang around when possible where things are going on, and keep your eyes open.
