If you're building multiple workstations that you'll need to
support, there seems to be value in making them consistent.

Sure... and the Dell desktop I buy this month has the same internals as
the one I buy next month. :-) I think you can achieve better consistency
building them yourself. However, I would still buy from Dell
(IBM/HP/etc) for a corporate rollout, not for consistency, but for the
convenience.
