My personal recommendation is this.  Set up the network with just the
gigafast router/switch and get comfortable with the topology and see hwo the
setup works that way.

Then, look itno going the next route with IPCop.  I think right now jumping
right to IPCop might make the situation more confusing than you want it to
be.  Also, since your/his son wants to setup the network, I would say let
him do it first.  After that point they can work together to move to the
IPCop setup.
