Dropwizard uses Jetty as a servlet container.

Tomcat ... That depends on your requirements. If you need a simple servlet container then Tomcat is a good option, f. e. if you want to deploy a Vaadin application.

But for REST services with Java Dropwizard will get you faster to your goal than Tomcat. And as Dropwizard produces one fat jar which is used with one configuration file deployment is dead simple. It is also easy to deploy to something like kubernetes: http://wiki.rpgnextgen.com/doku.php?id=dropwizard_with_fabric8_and_kubernetes

Dropwizard beats Ninja Framework for me because Dropwizard uses standard Jax-RS annotations for REST services whereas Ninja Framework has its own API (last time I looked).

The Java world is way different than the RPG world. There is a ton of frameworks and servers. Liberty server is one option among many. If you have to stick to Java EE it is one option. Though I like to be more flexible and like to use some non EE stuff. My personal choice is dropwizard. But there are also other great frameworks/server like ninja frameworks or vert.x or karaf.
