Dropwizard looks interesting and easier. Just when you think you've heard them all.
Also Resin and Jetty are still out there as Java server options too.
Would you consider Tomcat in today's world or is dropwizard easier in your opinion ?

The Java world is way different than the RPG world. There is a ton of frameworks and servers. Liberty server is one option among many. If you have to stick to Java EE it is one option. Though I like to be more flexible and like to use some non EE stuff. My personal choice is dropwizard. But there are also other great frameworks/server like ninja frameworks or vert.x or karaf.
