A hardware proxy is no different than a software proxy but as readymade appliance. Answer depends on what's easier: Spend money on a readymade product, or invest time to learn and roll your own.

And would the proxy then access our server via the VPN?

No. It's meant to be located in a DMZ "next to" the network where your i box is located.
