This isn't automatic but what I do is start that session then disconnect
that tab. If I want more sessions to that server make sure that session
has focus when I start the next one to it. Sessions start as a new tab in
the window with focus.

Now, does anyone know if there's a way that when you start a new session
from a different server it will automatically make it a new window instead
of a tab in an existing window (that's on a different session)?
