Easy:
1) Save upgrade data.
2) Ensure you saved upgrade data.
3) Be really sure you saved upgrade data.
4) Use the two Recovery DVDs. One right after the other. If you follow
the prompts it will be obvious what to do. Put the first one in the DVD
drive an use the menu option under HMC management to reboot the server
to start it.
5) Apply the service pack.
You won't use the update DVD.
Larry/Pete may jump in with more specifics but really that's all you
really need. Backing up the HMC is a good idea too, if you have an FTP
site somewhere in your network (not the IBM i instance) you can just
back it up to that server.

No instructions were included with the shipment .
I found "Installation methods for HMC Version 7 updates and fixes" at:

Following those instructions the installation fails on the first DVD, and
won't even start with the second DVD.
