A number of folks I know use VMWare ESX to host a console machine. They do, usually, only use that as one of two systems set up to be used as a console. They run a dedicated PC for the primary console.

I run LAN Console on virtual machines in my office all the time.

The trick is to have VMWare virtual machine set up to have a dedicated IP address rather than a NAT/PAT address.
