You should look into Hyper-V and VMM 2008 R2. Or VMware ESX, if you
like paying big bucks ;)
But in all seriousness, running your whole business on one box is also
a possibility in the Microsoft world - see SBS 2008.
But it all depends on the applications you run. Our software plays
well with others, but i sometimes see the same supportability
nightmare on the IBM i that i also see on Windows. There are software
packages that play well with other software on the IBM i, and some
that doesn't.
In many cases, an admin with the proper tools and knowledge can fix
these issues by ensuring that applications are segregated enough.
In the end you're much more flexible if you have your IBM i apps on
different machines - this way, you can bump your ERP machine to V6R1
because the ERP vendor actually does something for the horrible
maintenance fees and actually supports V6R1, but Vendor X with
Application Y is still stuck on V5R4.
